Urgent Updates!

I have been out for a while, but I'm getting back on my site as I have great news to share! I have since quit my day job of house cleaning as it was too painful to continue in my condition. I have fibromyalia, lost of muscles in my hips and legs, and diverticulitis, just to name a few! I got mad at my doctor and started research again. I came across a site on Facebook about fibromyalia pain in a book called Medical Medium by Anthony William. WOW, what an eye opener! This guy listens to the Spirit, you may have seen him on television. I was skeptical at first but, when he talks about everything I'm going through like he was in the same room with me, it wowed me! He tells me everything I never knew about diseases and viruses, that the medical doctors don't tell you either!

My history goes back to child birth!   When I was born, I was born nearly deaf! I had many fevers as a baby. I was diagnose with hearing loss at age 7. And at age 15, I was diagnose with mono (kissing disease), and in the book Medical Medium, Anthony talks about Mono and how that virus Epstein-Barr Virus (EBV) is in your body for life! Ok, where did it start? First, I was mad, but realize somewhere in my family (way back maybe 100 years ago) had gotten this virus and it spread from one generation to the next!  (95% of people have it) That's everyone!!! While the doctors don't tell you this information, Anthony does! He says, there are no cure! But it can be reversed! Yeah! I was hopeful again! I am following his plan for a better life! As much as I love the foods I cant eat anymore, it is so worth it to be pain free again! In his book, he talks about vitamins and minerals, and eating only plant base foods! As all other foods causes the virus to eat the bad stuff in all animal foods, dairy, gluten, GMO, MSG, to name a few! If you want to live a pain free or less pain, please get his books! I am not selling them and I'm not making money on his books! I am a victim of this disease and looking for answers and at age 58, I weigh 180 lbs. I have lost 5 lbs in a month! I finally got my questions answered! It was many years of research and I finally believe this is it! It's been a month of healthy eating and I do feel so much better! I still need to build the muscles in my legs caused by the antibiotics (Cepro) and I have started walking a mile! I will get there!
PS. Stay away from getting antibiotics and steroids! This also feeds the virus and weakens the immune system!  Thank You ALL for reading this and I'll try to answer any questions you have!

Finally... My Chocolate Toffee Recipe....Just in Time for Easter
Easter Gifts for my Big Kids. Pink for girls and Blue for boys!
I know it's hardly traditional fare for Easter but trust me 
these Chocolate Toffees are very delicious.
I have been working on the recipe which I inadvertently created
during my failed attempt making Fructose Free Chocolate.
Since then, I have successfully made these twice and unsuccessfully once
(not cooked for long enough and it was more like chocolate fudge sauce!)
The secret to my success was the purchase of a candy thermometer.
I strongly encourage you to get one if you want to have a go at making these.
Maree's Chocolate Toffees
1 cup Dextrose
1/2 cup water
50g butter
Grease a 10 x 20cm metal loaf tin with extra butter
Place ingredients in a saucepan and stir over heat until dextrose dissolved.
Cook until the mixture reaches the Hard Crack Measure on Candy Thermometer. 300F or 150C
Take off the heat and immediately add to this mixture
1/4 cup cocoa (that has been sifted)
1/2 cup full cream milk powder
1tsp lecithin powder or granules
(found them in Health Food section of Supermarket)
Stir vigorously until combined and a bit longer if using Lecithin granules
because they take a bit of work to dissolve.
Pour mix into greased pan and let it cool slightly.
When the toffee starts to harden use a blunt knife to mark it into sections.
When cool either break or cut into bite size pieces.
This recipe makes 32 pieces of deliciousness!

Another Easter tip is to make some Fruit Muffins and Spice them up a bit.
Today I made some Spicy Banana and Blueberry Muffins.
They are perfect for breakfast especially because
one of the main ingredients is Weetbix.
They freeze well and keep for a few days. If you don't eat them all on the day you make them then pop in microwave for 30 seconds and they taste like they were freshly baked.

and have made several different versions of it.
In this one I use 1 cup of blueberries and 1 and 1/2 mashed bananas.
If you choose to add bananas then also add
a tsp of bicarb soda to the dry ingredients.
To make it a bit more spicy I add 2tsp of cinnamon and 1tsp of nutmeg.
Baked Cheesecke to die for!
On the weekend I made the baked cheesecake from the recipe in
The Sweet Poison Quit Plan.
Oh my!
It was incredibly delicious.
David's directions for using foil to prevent water getting into the springform pan
did not work for me and the base was a bit water logged.
Still yummy though.
Next time I won't use a springform pan but will line
a regular pan in such a way that I can lift the finished cake out.
Now for something completely different.

Diet Cokes

Dear Live in the Now readers,

A couple months ago, Coca-Cola rolled out a new ad campaign aimed at reassuring consumers that its "diet" beverages containing the artificial sweetener, aspartame, are perfectly safe. According to the ads, aspartame is a "safe, high-quality alternative to sugar." This idea is laughable and flies in the face of hundreds of studies demonstrating aspartame's harmful effects.

That's why I thought it was a good time to share with you one of my more popular articles about the dangers of diet soda.


We're surrounded by junk foods and beverages. They're everywhere — in our grocery stores, in our restaurants and even in our schools. While I have a strong distaste for such artificial, highly processed goods, at least many of them are typically recognized for what they are. Most people know that Twinkies, Slim Jims and Mountain Dew are not healthy choices. What makes me really angry is when something that is bad for you is marketed as good for you. Why? Because it's a scam, it's unfair and it often has negative effects on the people who are most vulnerable — namely children.

Diet Drinks: Marketed as Safe, but Far From It

At the top of my list are diet drinks that contain artificial sweeteners. Decades from now, this will be one of those "what in the world were we thinking" topics. But today, we have to contend with the fact that the vast majority of the public considers diet drinks "good for you."

Whose fault is this? Well let's start with the global corporations that market these toxic concoctions as "healthy" alternatives to sugary drinks that can actually promote weight loss. I can't help but draw comparisons to the big tobacco companies that marketed their "light" cigarettes as healthier alternatives.

Next, we can blame our leaders and policymakers for being duped into thinking that promoting diet drinks is a good strategy to getting people to drink less sugary soda. Given the multiple scientific studies that prove that diet drinks (and soda in general) have numerous negative health consequences, this strategy is seriously flawed. An example of such policy is New York's attempted ban on large-sized sugary drinks that excluded diet drinks.

Lastly, we have ourselves to blame. There is always a level of individual responsibility with any social issue. We allow these drinks to be sold and, in my opinion, are not nearly vocal enough in terms of educating people about their dangers.

Sadly, Consumption of Diet Drinks Is Increasing

What inspired me to write this article was a study I read about in USA Today, which showed that the consumption of diet drinks has been steadily rising over the past decade. The worst part about this study is that almost 20% of girls aged 12 to 19 consume a diet drink on any given day. On many occasions, I've cringed to see kids under the age of 10 drinking diet sodas — their parents naïvely thinking they are making a smart choice for their children.

Let's Talk About Some of the Dangers

The dangers of diet drinks are numerous and well documented. While Live in the Now has reported extensively on these dangers, I've provided links to 3rd party sources below to avoid creating the perception that this is simply our opinion.

  • Some studies show that diet drinks can actually make you 70% fatter.
  • The artificial coloring used in diet drinks is a carcinogenic.
  • Aspartame and Neotame (Equal and NutraSweet) are also known carcinogens, even in low levels.
  • Sucralose (Splenda), alters the microflora in the intestine and "exerts numerous adverse effects, according to a Duke University study.
  • Diet sodas in general are linked to a 61% increase in strokes and heart attacks.
What To Do If You Really Like Soda

If you currently drink diet sodas, I hope you consider stopping. In my 20s, I used to drink a lot of diet drinks thinking they were harmless. But then I uncovered the truth, and once you know the facts, it's easy to quit. I do, however, enjoy drinking carbonated beverages. Here's my advice for you if you do too:

1. Avoid diet drinks like the plague!

2. If you must drink soda, one sweetened with corn syrup is probably better than an artificially sweetened drink, but remember this is just the lesser of two evils — neither is good for you.

3. More and more sodas are sweetened with cane sugar, which is a better choice than high fructose corn syrup. Still, please remember that any drink containing sugar provides "empty calories" and should be avoided.

4. If it's just the carbonation you like, try good ol' fashioned sparkling water. Just be careful because a lot of sparkling water (especially club soda) is made from unfiltered municipal water, so keep an eye on the water source. If it has lemon, lime or other fruit juice added, try to pick a drink that uses natural instead of artificial flavoring. Note: Some experts say that excessive consumption of carbonated beverages — even water — may leach minerals from your bones, so don't overdo it.

5. My favorite solution is using a SodaStream machine to add carbonation to high quality filtered or spring water or organic juice. I bought mine on Amazon.com, but they are widely available online and in stores. My kids (and I) love it because we can make all types of drinks that are refreshing and healthy. My only tip would be to upgrade to the glass bottles so you can avoid using plastic!

One parting comment — please spread the word about the dangers of diet drinks. I think if more people knew about the mounting evidence showing the numerous health consequences of diet drinks, very few people would consume them. The best way to mitigate the negative effects of a bad product on the market is to speak with our wallets and simply not buy it!

Mini Zucchini Cheese Bites


Ingredients
-2 cups grated zucchini ( about 1 medium)
-1 egg
-1/2 cup grated Parmesan Cheese
-optional: 1/4 cup chopped cilantro, salt & pepper
Directions
Preheat oven to 400 degrees. Spray a mini muffin pan with nonstick cooking spray. In a bowl mix the zucchini, egg, cheese and cilantro. You do not have to add any salt or pepper since the Parmesan is salty enough . Evenly divide the mixture into the mini muffin pan filling to the top, packed down in each cup. Bake for 15- 18 minutes until golden brown around the edges.

The zucchini is grated so only some of the green skin is noticeable. You can opt to leave out the cilantro .These are crispy on the outside and soft on the inside.
Super quick and easy to make. Using a food processor to grate the zucchini, then squeeze out the excess water in a paper towel or clean cloth. Add the rest of the ingredients and pack them into a little mini quiche tin. You can certainly double the recipe if you have more or even make them larger then mini.

  • Deborah Daugherty This meal was outstanding! It had wheat-free beer in the chili! Dairy free in the butter, but regular cream cheese as I forgot to get Dairy free on the cream cheese! You will love it! The recipe looks complicated, but it wasn't, if you just follow it slowly! The masa is made with gluten-free (homemade all purpose flour) recipe included on the site. The best meal so far!

I highly recommend you try these out the next time you are craving something different for your breakfast. They’d even be great for a brunch.

Here’s what you do:

1) Spray each muffin well with nonstick spray.

2) Place a slice of ham in the bottom of each muffin well.

3) Place about a teaspoon or so of diced tomatoes on top of the ham.

4) Sprinkle some shredded cheddar cheese over the tomatoes.

5) Break one egg into each spot.

6) Sprinkle a little bit of salt and pepper on each.

7) Bake at 180/350 degrees for 18-20 minutes or until the yolks are as firm as you desire and the whites are cooked through.

Vegetable Tian

OMGoodness! You talk about good eating! This is delish!!!!! I never used to like this type of stuff because I thought this type of healthy = NASTY... not the case. There is so much flavor in these types of dishes and it does a body good! It sure beats those fries that I used to stuff in my face not so very long ago...

Vegetable Tian (thinly sliced veggies topped with cheese and then roasted)...

Ingredients:

1 Tbsp. olive oil
1 medium yellow onion
1 tsp. minced garlic
1 medium zucchini
1 medium yellow squash
1 medium potato
1 medium tomato
1 tsp. dried thyme
to taste salt & pepper
1 cup shredded Italian cheese

Directions:

STEP 1: Preheat the oven to 180 (400 degrees f) Finely dice the onion and mince the garlic. Sauté both in a skillet with olive oil until softened (about five minutes).

STEP 2: While the onion and garlic are sautéing, thinly slice the rest of the vegetables.

STEP 3: Spray the inside of an 8x8 square or round baking dish with non-stick spray. Spread the softened onion and garlic in the bottom of the dish. Place the thinly sliced vegetables in the baking dish vertically, in an alternating pattern. Sprinkle generously with salt, pepper, and thyme.

STEP 4: Cover the dish with foil and bake for 30 minutes. Remove the foil, top with cheese and bake for another 15-20 minutes or until the cheese is golden brown

How to Maintain Healthy Bones

1. Maintain A Neutral ph- avoid sugar, salt and oils.
2.Avoid or Minimize Dairy- Dairy has never been shown to reduce the risk for developing osteoporosis and may increase the risk.
3. Take the right form of calcium and make sure you have adequate amounts of minerals.
4. Magnesium supplementation and osteoporosis.
5. Vitamin K
6. Vitamin B12 and Folic Acid
7.  Nattokinase- this is fermented soy.  It is widely used in Japan.

Eating a well balanced diet of whole foods, which helps the body maintain a neutral ph, will improve many conditions, including osteopenia and osteoporosis.
Ensuring an adequate supply of minerals including calcium, magnesium, and other minerals is essential.  supplementing with strontium, vitamin D, and Vitamin K will aid in bone strength. Daily exercise must also be part of any bone strengthening regimen. All of these components comprise oone and holistic way to treat osteoporosis, without the risk of any serious adverse effects. Bone and overall health will improve, but, most importantly, people will feel better on this regimen.

Osteoporosis drugs such as bisphosphonates(Actonil, Fosomax, Raloxifene, Evista) should not be used, or at least used as a last resort. They have too many adverse effects and they are too disruptive to the body's normal physiology. Remember, you can't poison a crucial enzyme or block an important receptor for the long-term and expect a good result.

Basic fat burning soup

6 large green onions
1 or 2 cans of tomatoes
1 large head of cabbage
2 green peppers
1 bunch of celery
1 pkg Lipton Soup Mix
Beef base- size of walnut
Seasonings- 1/2 teaspoon of salt, pepper, curry, parsley if desired. 1 teaspoon of garlic, oregano leaves, bay leaves, rosemary, sweet basil

Cut veggies in small to med pieces and cover with water. Boil veggies fast for 10 minutes. Simmer and continue until all veggies are tender. This soup will not add calories! The  more you eat the more you lose!

Chicken Breast Stuffed with Pepper Jack Cheese and Spinach

Perfect for low carb, pair this with a salad and your have a great low carb meal!

Ingredients

1 lb boneless, skinless chicken breasts
4 oz pepper jack cheese, shredded (you can use up to 6 oz)
1 c frozen spinach, thawed and drained (you can also use fresh cooked spinach)
2 tbsp olive oil
1 tbsp breadcrumbs (I use Italian style)
Sea salt, to taste
Freshly ground black pepper, to taste
Lots of toothpicks

Directions

Preheat oven to 180 (350 degrees).

Flatten the chicken to 1/4-inch thickness.

In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper.

Combine the Cajun seasoning and breadcrumbs together in a small bowl.

Spoon about 1/4 c of the spinach mixture onto each chicken breast. Roll each chicken breast tightly and fasten the seams with several toothpicks. This part requires a tiny bit of skill and I typically use about 8 toothpicks in each roll to ensure none of the filling seeps out. Be sure to count how many total toothpicks were used!

Brush each chicken breast with the olive oil. Sprinkle the Cajun seasoning mixture evenly over all. Sprinkle any remaining spinach and cheese on top of chicken (optional).

Place the chicken seam-side up onto a tin foil-lined baking sheet (for easy cleanup). Bake for 35 to 40 minutes, or until chicken is cooked through.

Remove the toothpicks before serving. Count to make sure you have removed every last toothpick. Serve whole or slice into medallions

Alternative Medication

I think we spend too much time and money throwing what's missing at the problem, rather than treating the body's inability to supply what's missing on its own. That is, let's help the body to what it should be doing better. Ok, diet and exercise, changes in lifestyle... I get it.. But it usually comes down to more than that. In other words, let's stop managing the problem and start eliminating it. Too much treating the symptoms and not enough focus on preventing or curing the disease. That being said, I would like to be more confident that there are effective alternatives to synthetic drugs, but maybe the problem is that we don't get as much bang for the buck with alternatives when compared to the relatively quick relief of traditional medications to treat only the symptoms. Surely the cost alone would be worth the effort. In order to do so, one must be ready to step off the well-trodden path of traditional medicine and into the realm of holistic/homeopathic. Again... let's figure out why our bodies need to work correctly and fix that.

When you have a sweet tooth and want to stay on track, here's a nice treat.
Sugar is NOT an added ingredient.

3 mashed bananas (ripe)
1/3 cup apple sauce
2 cups oats
1/4 cup almond milk
1/2 cup raisins (optional)
1 tsp vanilla
1 tsp cinnamon

Bake at 350 for 15-20 minutes

What you are about to eat…. Is it pure, from God or is it processed? Is it going to benefit your body? Will it nourish your body? Make every calorie count!

A~ Attitude

What is your attitude at this moment? Are you bored, tired, stressed? Are you really hungry or eating because of your attitude?

T~ Time

Is it time to eat? How long has it been since your last mini-meal? If 2-3 hours then go ahead and eat otherwise wait. Do not go longer than 4-5 hours without eating. Doing so will slow down your metabolism and your body will want to store your next meal as fat.

Crabmeat Quesadilla

Crab Quesadilla
Ingredients:
  • 3/4 cup cooked and chopped crabmeat (If using canned crabmeat, double check the label to ensure it is gluten-free)
  • 1/2 cup Monterey jack cheese, shredded & divided
  • 1/4 cup cheddar cheese, shredded
  • 1 avocado
  • 1 lime
  • 1 green onion, thinly sliced
  • 1 cup of chopped cilantro
  • 1 Serrano pepper
  • 1 jalapeño pepper
  • 1 red bell pepper
  • 1/2 Tbsp. garlic, minced
  • Rudi’s Gluten-Free Spinach Tortilla
  • 4 Tbsp. butter or olive oil or both!
Sriracha Wasabi Sour Cream
  • 1/2 tsp. wasabi
  • 1 Tbsp. gluten-free Sriracha
  • 1 cup sour cream
Directions
  1. Chop and sauté red pepper, Serrano pepper and jalapeño pepper together on med-high heat with olive oil or butter.  Add minced garlic towards the end of the sauté and reduce to med/med-low heat.
  2. Combine crabmeat, Monterey Jack cheese, mozzarella cheese, cheddar cheese, green onions and garlic in medium bowl; squeeze 1/2 of lime over ingredients and mix well.
  3. Spread about 1/2 cup mixture and sliced avocado onto 2 tortillas; sprinkle evenly with remaining Monterey Jack cheese.
  4. Top with remaining tortillas.
  5. Melt 1 tablespoon of butter on cast iron griddle over medium-high heat.
  6. Add one quesadilla; cook for 2 minutes on each side or until golden brown.
  7. Repeat.
  8. Cut each into six wedges.
  9. Serve with Sriracha Wasabi sour cream for dipping.

Zucchini Fritters
Ingredients:
  • 2 zucchinis
  • 1/3 large onion chopped
  • 1 tsp. Majestic Garlic or 1 clove garlic
  • 1 egg
  • 1/2 cup garbanzo bean flour or your favorite gluten-free flour
  • 1/8 cup tapioca flour
  • 1/2 tsp. baking soda
  • Sea salt to taste
  • Coconut oil or pancetta oil
Directions:
  1. Cut the ends of the zucchini off and discard.  Then, cut the zucchini into 4 pieces.
  2. Toss the zucchini, onion and garlic into the food processor and pulse until finely chopped.
  3. In a separate bowl beat the egg.
  4. Mix in the contents of the food processor into the bowl and add the flour and seasonings.
  5. Using a tablespoon, spoon this batter into a heated pan with either the pancetta oil or coconut oil and cook over medium high heat until browned. Turn it over gently and finish cooking.
  6. Remove from pan, sprinkle with a little salt if you like and serve. You can also top them with the crisp pancetta if you like.
